The research at the UMR PAM is organized around 4 transversal axes:

- microbial stress: Dynamics of the responses of microorganisms to environmental perturbations,
- water and structure: Hydration and biological systems,
- encapsulation and activities: matrix structuring and vectorization.
- oxidation of food and wine
